Today I would like to share with you another recipe in the book Food for the heart written in collaboration with Macro Group. The tabule that I would like to propose today is an aromatic, light and health-friendly salad thanks to the presence of quinoa, chickpeas and cherry tomatoes.

To prepare the recipe I used 300 g of quinoa cotta. Cut the tomatoes into quarters, then the cucumber and diced onion.

In a small bowl mix 3 tablespoons of extra virgin olive oil, 3 tablespoons of lemon juice, 3 tablespoons of balsamic vinegar, 1/4 teaspoon of cumin and 2 finely chopped garlic cloves. Season with salt and pepper. Leave everything to rest for about 30 minutes.

In a bowl pour the quinoa, tomatoes, chickpeas, cucumber, onion and finely chopped parsley with some fresh mint leaves. Finally add the aromatized oil, mix well and serve.
