Rice noodles with vegetables are a very tasty first course typical of Chinese cuisine. In any self-respecting Chinese restaurant you'll find rice noodles with vegetables on the menu, I'm sure.

Remove the outer sheath of spring onions and slice the white part into slices, set aside the green part instead. Peel the piece of ginger and grate it. Heat the peanut oil in a wok, when it is hot pour the onion and the ginger.

Lower the heat and cook for 10 minutes, stirring occasionally and taking care not to burn the spring onion. Meanwhile, peeled carrots and zucchini cut into julienne strips with the help of a grater with large holes.

When the onions in the wok have softened, turn up the heat and pour the carrots. After 2 minutes add the zucchini. Meanwhile prepare the omelette:

just mix the chickpea flour and the flour 0 sifted with a whisk to avoid the formation of lumps, the bicarbonate and the salt, add the oil and water in a continuous way stirring until it forms a smooth and lump-free batter .
