In a bowl, pour the rice flour and the impalpable coconut flour, mix and add the rest of the ingredients: one whole egg and 120 g of almond milk (also the coconut one will be good) without added sugar.

Work everything taking care to eliminate any lumps, until obtaining a smooth and homogeneous consistency. Leave the batter to rest for 10/15 minutes, stir again before cooking.

Preheat a non-stick pan and pour a ladle of mixture that will be distributed on the bottom (quickly tilting the pan in all directions and using a spoon).

Cook each crêpes over a moderate heat until the typical bubbles start to form on the surface (it will take about one or two minutes. Lift the edge to check the cooking). Once ready, cook for a few more seconds on the second side.
