Boil the potatoes (with the peel) together with the carrots until cooked peeled potatoes and in the meantime also boil the spinach cube.

Crush potatoes and carrots with a crushed potato and let cool on the worktop, along with the spinach.

Then knead the dumplings by combining the flours, salt and nutmeg to obtain a soft but compact dough. Add flour if it is too soft.

When the dough is ready, cut it into slices and knead each slice with your hands until you get a long and fairly fine roll. Then cut each roll into small pieces to form the gnocchi.

For the sauce: rehydrate the granular soy in salted boiling water or vegetable broth for 10 minutes, then squeeze the excess water.

Prepare the sauce by sautéing 1 clove of garlic in 3 tablespoons of oil, add the tomato sauce and the soya rehydrated.

Cook for about 20 minutes. Proceed to bake the dumplings in salted water and, once they come to the surface, drain them and keep them in the soy sauce, adding nutmeg to taste.
