In a blender, add pecorino cheese, parmesan cheese, olive oil and plenty of pepper (you can use different types of pepper and give a special taste to your cake and pepper).
Bring to a boil a pot of salt water (be careful to save it a little less than usual as the pecorino will contribute to the saltiness of the dish).

When the dough is almost cooked, blend the pecorino compound with a little cold water and cooking water (the one you set aside) until you get a well-bonded and smooth sauce

If the sauce is too liquid you can add more pecorino and parmesan cheese, if it is too dense, add hot water and cold water
(Why use cold water too? Because at too high temperatures the cheese tends to spin and so the sauce is too granular and unpleasant on the palate).
Be careful not to create a thick sauce, because the cooking water contains starch, so as the sauce cools down, it tends to thicken.
As soon as the dough is cooked, drain and mix it in the same saucepan pot, for a few seconds. Finish the dish with a sprinkling of pepper
