A light version but just as delicious typical cauliflower gratin with bechamel sauce and parmesan.
Wash and clean the cauliflower removing leaves and stalk tougher. Then cut into florets of the same size.
In a saucepan full of boiling salted water blanch the florets for 5-10 minutes. Lightly grease a 25x25cm square baking dish and pour the cauliflower florets.
Working with the bread crumbs 3 tablespoons oil, salt, pepper and rosemary and pour it on the surface of the florets.
Drizzle with the remaining oil and bake in a convection oven at 180C for 40-50 minuti.Sfornare and serve.
