With a cloth, clean the peppers one by one, removing the petiole and with a knife cut them in half and remove the internal seeds under running water. As you proceed with cleaning, place them on a dry cloth to remove excess water.

Put a low and wide pan on the stove and put a generous round of extra virgin olive oil and a finely chopped onion. Fry the onion until it is golden brown.

Add the friggitelli well dry (I recommend to dry them as much as possible, otherwise it will splash all the oil), salt, pepper and put on the stove over medium heat.

Cover the paella almost completely and cook for about 10 minutes. When they are dried, remove the lid and raise the heat: brown them, turning them often to prevent them from burning: when the peel begins to darken, add the box of peeled tomatoes.

Fill the same jar of peeled tomatoes halfway with water and add it to your preparation. Add some fresh basil leaves and cook for 10-15 minutes.
