This version of the piadina is certainly not for purists, but it is 100% vegan friendly and healthy, because it is based on whole wheat flour and without lard.
Put all the dry ingredients and seeds in a bowl, then add the oil and start kneading. Meanwhile, add water a little at a time.
Transfer the dough on a pastry board and continue to knead to make it soft and smooth.
At this point, helping yourself with the scale, divide the dough into 10 parts of about 80 grams each.
Heat a pan with a non-stick bottom over medium heat and in the meantime start rolling out the dough portions with a rolling pin to obtain discs of about 18 - 20 cm in diameter.
Cook each piadina in the pan for about 2 minutes per side. As they are ready, wrap them in a clean cloth so that they remain soft and do not cool.
You can fill the piadinas as you prefer and if you want, once cooled, you can transfer them in a frost bag and store them in the freezer and then heat them in the oven if necessary.
