Leave the black rice to soak for about a couple of hours, in this way the cooking will halve and be more hasty. Once the soaking time has elapsed, we prepare the asparagus and put on a small pan of water to boil

Cut the asparagus into chunks and mix in a non-stick pan with a knob of butter, salt, a little water and a mirror of garlic. Cook over medium low heat with lid. As soon as the water boils we throw the rice and let it cook for 15 minutes

While everything is cooking we clean the shrimp. I removed all the peel and intestines, but I left 4 whole for the final decoration (2 each). Cooked asparagus, remove the clove of garlic and take half of them to put them in a mug to blend them

I create the cream of asparagus to put as the base of the dish. To facilitate the mixer I add two tablespoons of water. With the remaining asparagus I cook the shrimp in such a way as to make the flavor take; after 15 minutes of cooking the rice, drain it and put it in the pot

I leave to cook for another 10/15 minutes adding only two more spoons of water, low heat with lid. Black rice remains more crunchy than normal rice, so if it seems raw, don't panic, it's its consistency.

Creation of the dish: at the base I put the cream of asparagus and on top towards the rice with the remaining asparagus and shrimp. As a decoration I put whole prawns to give a wonderful optical effect
