Main course easy, the spinach burger is great food both warm and cold, with or without bun. If the served to the plate, prepare a mashed potatoes and carrots contour. Depending on your tastes, you can use other vegetables and experiment with different types of veggie burgers, according to the seasons:

Wash the spinach leaves (I used those in the envelope, already washed) and chop with a mini Pimero or a blender until you reach a consistency kind parsley.

Transfer the spinach in a bowl and add the eggs, bran, salt, oil. Pepper to taste.

Bake in a small round baking pan lined with parchment paper (I will use a hinge) or give the dough the shape you prefer with hands (burgers, meatballs) and place it on a baking sheet with parchment paper

Bake for 30 minutes in an oven preheated to 180 degrees.

Serve in a bun with salad, tomato and your favorite sauces or at the plate. As a side dish, I suggest to choose a mashed potatoes or a portion of salad with julienne carrots.
