Start by soaking shiitake mushrooms for at least 30 minutes to make them come to life. Then peel the pumpkin and wash and check the zucchini; with the help of a grater with grated broad holes the pumpkin and zucchini.

Then fry in a wok the oil with the white part of the sliced onion. Still keeping the wok sizzle, add the pumpkin and zucchini and cook for 2 minutes. Finally add the shiitake mushrooms previously soaked in water and squeezed.

Let it fry a few more minutes. Then add the soy sauce, lower the heat and let it simmer for 15 minutes.

Meanwhile, heat about 500 ml of water in a saucepan and, when it boils, turn off the heat and pour the noodles, cover with the lid and let them soak for about 10 minutes or for the time indicated on the package.

Once cooked the noodles, drain and transfer them in the wok with vegetables, sauté a few minutes and, if necessary, adjust with another bit of soy sauce.
