Tabbouleh is a kind of Lebanese salad based on parsley (and not Bulgarian as many believe). It's very easy to prepare, fresh and extra-rich in vitamins C and K!
preparation
step 1
Buy about half a kilo of fresh parsley (or even better, pick it up from the garden), soak it in a basin of water and then let it dry in the air.

Remove the final part of the stems and cut the parsley finely with a knife or a crescent (it takes a little patience)

Add the previously soaked bulgur for about twenty minutes in a little water (not cooked !!). NB The main ingredient of tabbouleh is parsley! The bulgur only serves to give a bit of crunchiness;)

Also add the tomatoes and half onion, all always very finely cut! Do not forget 4 fresh mint leaves (or a sprinkling of dried mint).

Season with a lot of lemon juice (1 and a half or two depending on the size of the lemon and your personal taste), salt, pepper and extra virgin olive oil. Mix and voila ... your tabbouleh is ready ..
