Lentil Goulash is spicy and comforting, perfect for winter dinners. With the pressure cooker it is prepared in 30 minutes.
First, soak the lentils for about a couple of hours.
Cut the onion and carrot into large pieces, chop the garlic. Heat the oil in the pressure cooker, add the vegetables and garlic. Sauté them for about 5 minutes.
Add the spices and bay leaf. Mix then add also the tomato puree, water and the vegetable nut. Bring the ingredients to a boil, then drain the lentils and put them in the pot.
Close the lid of the pressure cooker, lower the heat to low and let the lentils cook for 15 minutes.
When ready, turn off the heat, vent the pot, open the lid and adjust the salt and pepper.
Serve the lentil goulash hot, accompanying it, if you want, with mashed potatoes or white rice.
