An omelet with zucchini and carrots, which I enjoyed turning into a turret with grilled aubergines. I think that on a summer buffet table or for dinners with friends and children, the Frittorre will not go unnoticed!
Wash and sliced 1 round eggplant and a zucchini, salting the eggplants to drain them.
In the meantime, cut a small carrot and a zucchini in a small frying pan and cook in a non-stick frying pan with a little oil.
Add water if necessary. Open the eggs, bake them with salt and pepper, add them to the vegetables and cook the omelette on both sides.
At this point you keep aside the omelette and grate both the aubergines and the zucchini (you can prepare them well in advance).
Proceed to assemble the towers, alternating the eggplant slices with the omelets (cut out of the same eggplant shape)
Accompany the tower with grilled zucchini seasoned with balsamic vinegar and parsley.
You can accompany this second dish with 70g of wholemeal bread, either fresh or as a bruschetta of tomatoes and oregano.
