Fit and vegan version, without saturated fat, with full flour and a low glycemic index of the famous cinnamon sweet sweets. Perfect to accompany with a hot tea or cream based on Greek yogurt or fresh light cheese.
Heat the milk in the microwave or in a pan, be careful not to exceed 45 ° C or the yeast will not be activated.
Also add 7g of coconut oil (about half a teaspoon) and let it dissolve in milk, then pour 25g of coconut sugar and mix. Spread the yeast on the surface and let it rest for 15-20 minutes.
After twenty minutes add a pinch of salt and start adding the flour a spoon at a time.
First mix with a spatula until the mixture reaches the consistency of a real dough. Make a ball and knead on a plan while continuing to add little flour at a time.
Once ready, place the dough in the bowl, cover with a damp cloth and let it stand for about half an hour in a sheltered place (eg oven off).

Take the dough back and, with the help of a rolling pin, place it on a floured or baking sheet with a rectangle about 40x25 cm.
In a bowl add 60g of coconut sugar to 5g of powdered cinnamon and mix. In the meantime, melt 7g of coconut oil.
Brush the entire surface with the coconut oil leaving a 1-2 cm border on each side. Dirt with the mixture of sugar and cinnamon to cover the whole dough evenly.
Pay close attention and help with the baking paper, roll up the dough until it rolls. With a piece of twine or knife cut the roll into 14 pieces of the same size.
In a cake platter with coconut oil or lined with baking paper cut the small rolls one by one from the center. Cover again with a damp cloth and let it rise for about 45 minutes.
Once yeast, cook in a static oven at 180 ° for about 20 minutes. Let cool before separating them.
