If you are looking for a second dish that is simple to prepare and inexpensive, the Baked omelette can be an excellent solution!
In a large bowl add the eggs and beat them energetically with a whisk or fork, just enough to break them and mix the two components of the eggs.
At this point add the grated Parmesan cheese, the breadcrumbs, salt, pepper and some fresh chopped parsley.
Stir to mix the ingredients well.
Now take an ovenproof dish or baking sheet and line it with parchment paper.
Pour the mixture and bake at 180 degrees for about 20-30 minutes (depending on the thickness of the omelette).
Once ready (it must be golden on the surface), take it out of the oven and serve it!
Excellent served hot but also warm / cold.
