Remove the skin from the turkey, panarlo in flour and fry in a large frying pan with oil and cook it for a few minutes then add the chopped onion and a pinch of salt.
Deglaze with the wine and add a sprinkling of different types of pepper also pink pepper and green and red pepper powder.
When the wine has dried add the melon cut into chunks and other spices cook for few minutes then add the water.
