Chicken with peppers is a classic dish of traditional Roman cuisine, a recipe linked to the ancient cuisine of the Castelli Romani area to be precise, traditionally prepared on the occasion of Ferragosto. Like all traditional recipes, even the chicken with peppers boasts different interpretations both in the addition of ingredients and in the cooking method. While maintaining the basic recipe, a small review in the presentation of the dish was made by me and that my fellow countrymen don't want it!
preparation

To prepare the chicken with the peppers, quickly wash the chicken pieces under cold water and, if necessary, pass it over the flame in order to scorch any hair, and make the skin edible.

In a tall and non-stick pan, place the crushed garlic together with the oil and let it color; then add the chicken. Brown the meat on a cheerful flame until completely browned, after which it is blended with white wine and evaporated.

Meanwhile, peel the peppers, remove the seeds and white filaments, and cut them into broad layers. Also wash and cut the tomatoes into pieces.

When the wine has evaporated, add the tomatoes to the chicken, leave to flavor and also add the peppers. Season with salt, cover and cook for about 45 minutes over medium heat, stirring occasionally.

Once the chicken is cooked, remove the meat from the rest of the dish and place it on a plate. Allow it to cool.

Remove the skin and de-boner it, cut it into strips and place it in the glass of the food processor or blender. Combine some of the cooking liquid with the meat and operate the machine to whisk everything until you get a cream

Heat the cooking sauce of the chicken and peppers, and with it wet the wholegrain friselle. Lay each wet frisella in the serving dish and cover with the pureed chicken cream.

Spread over to complete and decorate the peppers cooked with the chicken, rolled up on themselves. Serve with a sprinkling of oregano and serve immediately.
