Boil a nice pot of hot water and fry the chicory. Cook it for about ten minutes. Peel the potatoes, cut them roughly into cubes and let them boil for 8 to 10 minutes.

In the meantime, prepare the dough: in a large bowl pour the water and then the oil. Add the salt, a couple of pinches, a sprinkling of pepper, and then pour the flour slowly by mixing with a spoon
