First of all lightly toast the sesame seeds. Be careful not to toast them too much otherwise they become very bitter.

Blend the toasted sesame seeds until they are reduced to flour. Put it aside. Toasted sesame seeds give a bitter aftertaste to the froth. If you do not love it avoid to toast them, or do not put them. The foam will be different but equally good.

In a jug pour the cannellini beans, the oil, the cumin, the lemon juice and the sesame flour.

Blend until you get a compact cream. You could also eat like this, but we take another step forward to get a frothy product.

Whisk the cooking water of the cannellini beans to snow. Use the tool / method you used to whip egg whites.
