Curry Lentils and Coconut Milk

A delicious soup of curry and turmeric Thai style.
Sauté 1 tablespoon olive oil with the onion and garlic in a pot.
Then add the vegetable stock, diced potato, curry, turmeric, maple and salt.
Stir and cook over medium-low heat until the cubes are tender. Incorporate the coconut milk and cook for 5 more minutes.
Process in juicer.
Skip the vegetables you have at home (I used broccoli, cauliflower, green onions, carrots, pea shoots, and shiitake mushrooms). I also cut tofu into squares and added it.
