If you have a whole chicken breast, cut it in half and make a high escalope from it. If you have slices, you do not need to cut them. I prefer the whole breast, because I like the high slices, those already cut are too thin for my taste!

Cover the grill with salt up, just to cover the area where we will put the slice. Grill in the hot grill for about 10 minutes in total, but adjust according to the thickness of the meat.

Once ready, wrap it for 10-15 minutes in the foil, so that it rests remaining very warm.

We heat the non-stick pan and bake the bacon, it must be crunchy but not burnt, so we keep the medium flame so as not to lose sight of it.

Cut it into small pieces, add it to the cheese in a tall container and season with salt and pepper. If you like it, even a few drops of lemon helps it not to blacken. Blend until you get a soft and homogeneous cream.

Let's mount the salad. At the bottom of the plate we arrange the salad. We have bread, tomatoes and bacon on it. Cut the chicken horizontally and arrange the slices. Serve with the sauce aside!
