Today I propose the pizzas baked eggplant. An easy appetizer, fast, low-calorie but really tasty. Also excellent as a main dish or a side dish. Try them, they are like cherries, one leads to another!

Carefully wash the eggplants and cut each into 4 slices. Place them in a pan lined with parchment paper greased with olive oil and bake in a preheated oven at 200 degrees for 15 minutes.

Wash and cut each tomato into 4 parts, put them in a bowl and toss with a pinch of salt, chopped basil, oregano, the capers, chopped, and the tuna crumbled and drained.

Remove the eggplant from the oven, turn them on the other side, distribute on the surface of the tomatoes with tuna and bake again for another 15 minutes, until the mozzarella will not be melted and golden.
