It starts from 6 egg whites and 2 egg yolks. Beat the egg whites until stiff with a pinch of salt.

Pour the egg whites into spoons on a non-stick pan forming two small clouds

Place in preheated oven at 180 degrees for a few minutes. As soon as you start to form a little 'crust, add the egg yolks in the middle of the two clouds.

TIP: In reproducing it, what matters is not to put the oven too high, otherwise the eggs become brown while they must remain clear enough. So it is better to set the oven at a slightly lower temperature and let it cook for another minute.
