I often ate this dish in Taiwan, whose base was more or less the same: a bowl of rice with grilled cabbage and then a soft-boiled egg. Then there could be meat, fish or other vegetables, but my favorite was always the basic one: the creamy egg melted among the grains of rice and created a rich but nutritious dish.

Boil the water for the soft-boiled egg in a saucepan, while in a larger saucepan put the water to boil for the rice.

Chop the shallot, fry it with the seed oil and start cooking the savoy cabbage. I prefer it crumbled, since it mixes better with rice.

When the water is boiling, cook the egg for 3 or 4 minutes (depending on how you prefer the egg white, if softer or a little 'more cooked) and then drain immediately under cold water.
