Prepare the vegetables: chop the capers, the dried chilli pepper and the garlic, cut the carrot into semicircles and the sliced mushrooms.

Wash and remove head, tail and fishbone from anchovies, and leave them in whole fillets.

Start cooking in a pan, heating the fish broth (or water if you don't have one) with the minced capers, garlic and chilli pepper. Then add the carrot and mushrooms and cook over low heat with a lid until the carrots are tender.

Add the brown rice which had undergone pre-cooking by absorption (pilaf), together with the anchovies.

As soon as the anchovies reach the whitish complexion, turn off the heat and serve. Add parsley, extra virgin olive oil and pepper.
