description
I bought a package of 500g of salted lupins on offer. Knowing that I wouldn't be able to eat them all, I decided to turn them into delicious vegan burgers, to be frozen and eaten whenever they felt like it. I got 9 burgers with these doses, but you're free to make them smaller, bigger, even in meatballs
preparation
step 1
First I left the lupins for two days in the fridge, often changing the water to desalinate them. Once this procedure is done, I remove all the peel from the lupins. 500gr is the gross weight including peel
step 2
I add the lupins in a powerful mixer together with the raw courgette cut into small pieces and all the other ingredients
step 3
The mixture will be grainy but continue to mix at high speed so as to make it more compact. It will always remain grainy but much less. To help it all I added 2 tablespoons of water
step 4
Transfer everything into a bowl and add the breadcrumbs. I added 3 tablespoons but here the doses are relative, to taste, if you like them more creamy, drier
step 5
Form the burgers and pass them again in the breadcrumbs for breading
step 6
Bake in the oven or in a pan with a little oil. For the oven 180 grams for 15 minutes with browning
