description
Today's recipe is the Tart of Figs an ideal dessert to be made in late summer when figs start to abound in our harvest and on our table. So I decided to prepare a shortcrust of buckwheat flour with a more rustic and decided taste that, in my opinion, goes well with the sweetness of figs. The filling I made is like a last-minute jam, perfect for those who did not have time to prepare it in advance;)
preparation
step 1
To prepare the fig pie, pour the buckwheat flour into a bowl, add the yeast and mix.
step 2
Pour the water flush and continue to mix.
step 3
Then add the molasses (4 tablespoons) and the oil (or sunflower or grape seed) and always mix with a fork.
step 4
We continue to work the dough with your hands until forming a smooth and homogeneous ball. We wrap it in transparent film and let it rest in the refrigerator for 30 minutes.
step 5
Meanwhile, in a non-stick pan, pour the red wine and let the sugar melt.

step 6
At this point we also pour the figs peeled and cut into 4 and cook for about 15 minutes, stirring occasionally. When they are piers we pour in a bowl and let them cool.
step 7
After 30 minutes resume our gluten-free shortcrust pastry, spread it with a rolling pin on a lightly floured surface and place it on a baking sheet covered with parchment paper.
step 8
Pour the figs that we cooked and bake the pie in a preheated oven at 180 degrees for about 20/25 minutes.
step 9
When it is cooked, let's cool it and decorate the gluten-free fig pie with fresh figs and a bit of molasses.
