Fast, easy and tasty. I took inspiration from a pizza eaten in Palermo and I wanted to reinvent it with piadina, changing some ingredients. In short, I only kept the pistachio pesto and the buffalo mozzarella.

Prepare grilled aubergines, buffalo mozzarella, pistachio pesto and Prague ham.

Take the piadina and, after identifying the half, spread the pistachio pesto on the left half. On the right, the slices of Prague ham, over the aubergines and above the buffalo mozzarella.

Close the piadina being careful that the pistachios are in contact with the buffalo mozzarella.

Take a non-stick pan and place it on the burners. Once the pan is warm, place the piadina inside and close with a lid.

Respect the recommended cooking times on the package, I left it for 5 minutes on each side.

Remove from heat and serve hot, being careful to have stringy buffalo mozzarella.
