Knead the pastry into a fountain with 350 g of flour, add 180 g of sugar, 1 whole egg and 2 yolks, the yeast, the milk and the melted butter. Knead until a smooth and homogeneous dough is obtained.

Cover the dough with plastic wrap and let it rest in the fridge for about 30 minutes.

Meanwhile prepare the filling of the delicious. Whip the cream and set aside.

In a bowl whip 1 whole egg and 1 yolk with 150 g of sugar. Once a frothy mixture is obtained, add the cup of coffee, 3 tablespoons of flour, transfer everything to a saucepan and put on the fire.

Cook the cream until it thickens. Once ready, leave to cool.

When the cream is cold add the whipped cream and mix by hand with a spatula from the bottom upwards so that the cream does not come off. Once ready, leave to rest in the fridge.
