Wash the pumpkin under running fresh water and cut it in half. Remove the seeds and filaments using a spoon. Then cut it into pieces and peel it. From the small pieces obtained get small cubes, less than one centimeter on the side.

In a pan, with a little olive oil, sauté a finely chopped onion.

Add the pumpkin and mix. Cook for a couple of minutes on a high flame.

Add a ladle of water (or broth), salt, pepper and cook over medium heat, covered, for about 10 minutes. Check from time to time and add more water (or broth) if the cooking liquid is too dry.

When the pumpkin is cooked, place half of the pan mixture in the blender and blend until creamy. Then put it back in the pan with the remaining pumpkin cubes.

In another pan, with a drizzle of extra virgin olive oil, brown the bacon cubes well, over high heat, stirring constantly.

Boil the pasta in abundant salted water and, just before draining it, add a tablespoon of cooking water in the pumpkin cream, mixing it thoroughly.

When the pasta is cooked, sauté for a few minutes in the pan where the pumpkin is present, also add the pancetta and mix all the flavors well.
