The procedure for preparing pancakes is very simple. In a bowl add the dry ingredients: flour, sugar and baking powder.

Add the vegetable drink (I of hazelnuts) a little at a time and mix with a kitchen whisk. Adding the drink a little at a time and stirring slowly makes it easier to mix the ingredients without the formation of annoying lumps.

Heat a non-stick pan over medium-low heat, pour a ladleful of mixture and wait for bubbles to form on the surface.

Turn it over and cook a few seconds on the other side (to cook each pancake takes just under a minute). Remove it from the pan and place it on a plate, covering it with a cloth. The cover serves to conserve the heat.

Continue with the rest of the batter. The pancakes are ready to be stuffed as you like. In my case, I cooked a handful of frozen red fruits until the juice thickened a bit, I covered the pancakes and sprinkled with a lot of maple syrup.
