The apples for these sweets are used both cooked in the dough and on top as a decoration. If cut into squares you get very soft and delicious cakes otherwise with the same mixture you can prepare a classic and rich apple pie.
Peel 3 apples, cut them into small pieces and cook them in a pan with 10g of butter and 20g of sugar. Put the lid on and allow it to soften for 5 minutes.
Pour the limoncello and let it evaporate. Switch off and blend with a sprinkling of cinnamon. Slowly dissolve the remaining butter and let it cool.
In a bowl beat the eggs with the remaining granulated sugar, a pinch of salt and lemon zest.
When they are light and foamy start to incorporate the flour, baking powder and slowly melted butter. Finally add the apple shake and mix well.
Pour the mixture into a 24cm cake tin. coated with baking paper and level well. Cut the remaining apples into wedges and arrange them in a radial way so that the back of the apple remains uncovered.
Sprinkle with a tablespoon of brown sugar and bake in a hot oven at 180 degrees for 40/45 minutes.
