Have you ever tried spiced lentil soup? I speak of lentil dahl, typical of Indian cuisine. The ingredients are: peeled red lentils, celery, carrots, spices (I like to use cinnamon and cumin powder), lemon and oil. This is my version.

Clean and cut the celery and carrot into cubes. For my personal taste I cut the celery into very small cubes, the carrot instead into slightly larger pieces.

Put the lentils in the pot, cover them with water (at least two fingers above the level of the vegetables), add the salt and the spices and bring to the boil.

At this point, add the chopped vegetables, stir and simmer for 20 minutes. Add a little water as needed. The soup will have to be quite thick: if you overdo it with water, at the end of cooking coarsely drain the legumes, keeping the delicious broth.

Once the cooking is completed pour the juice of half a lemon and a round of oil into the pot. Ready!

Now I explain to you how you can install it. Classic version: serve the soup as it is, perhaps accompanied by a portion of wholemeal basmati rice.
