This quick and easy recipe has been suggested by my friend Serena, who uses it to make her children eat fish. I modified it using zucchini instead of mozzarella, but you can also use the new spinach. It's a great dish to share with friends and a soul mate, or it can be an excellent aperitif or an appetizer.

Grate the zucchini and sauté in a pan with a little oil and chilli pepper. Do not complete the cooking.

Clean the salmon fillets and marinate for 15 minutes in a marinade formed with ginger powder and chives.

Roll out the dough and place in the middle of the cold zucchini. Put the marinated salmon fillets on the courgettes and cover them with the other half.

Close the fillets in the puff pastry by cutting the puff pastry into strips laterally and intertwining them on the upper side.
