Straight from the recipe book of my grandmother, a recipe saves egg whites.

We gather in a bowl the sugar, almonds and lemon zest to which we add the whipped egg whites. Knead with a spoon, we will get a crumbled mixture.

We prepare some sugar (about 20 gr) in a bowl or in a plate and a bowl with water. Let's wet our hands and make little balls little smaller than a walnut, which we're going to bread in sugar.
