In a fairly large bowl, combine the type 1 flour, the whole wheat flour and the hemp flour. Mix carefully and add the yeast and salt, taking care to keep them separate.

Pour extra virgin olive oil into the bowl and add the water a little at a time, stirring with a wooden spoon. When you have finished all the water, continue to work the dough by hand until you get a very homogeneous and smooth.

Cover the bowl with the transparent film and transfer it into the oven. Operate it at the maximum temperature for one minute and then switch it off. From this moment, calculate 8 hours of leavening.

After 8 hours, extract the dough from the oven and divide it into three 24 cm diameter baking sheets lined with baking paper, sprinkle with flour and crush it with your fingertips in order to spread it evenly. Cover the pizzas with a cloth and let them rest for 30 minutes.

Heat the oven in static mode and bring it to the maximum temperature. In the meantime, prepare the tomato sauce and other condiments that you like best.
