Using a whisk, beat the egg yolks and sugar together until creamy.
Add the cream to the egg and sugar blend a little at a time and continue mixing. Season with the seeds scraped from the vanilla pod.
Divide the cream between four airtight jars.
Place the jars in the oven, which has been pre-heated to 80 °, and cook for 40 minutes.
Remove the jars from the oven and allow to cool in the fridge. When you are ready to serve, open the jars and decorate with fresh raspberries and chopped pistachios.
