I firmly believe that coconut flakes can give that extra something to each recipe, even the simplest. There are many possible combinations: coffee, apple, lemon, chocolate, pear and why no strawberries, almonds, in short, a wide variety of choices not? For these pancakes I decided to combine some of the tastes I love most and that, together, form the perfect mix of flavors and nutrients.
After shredding the banana in puree, add the hazelnut flour (alternatively, finely chop the same amount of whole hazelnuts), the coconut flour (no coconut rapè) and stir.
Merge the liquid ingredients and mix well all this so as to eliminate possible lumps.
Pour a spoonful of mixture onto a non-stick hot pan and cook on medium fire on both sides.
Once ready, complete the dish with fresh fruit and hazelnut grain.
