In the bowl we work the soft butter with the sugars (caster and icing), add the flour, the lemon peel and the poppy seeds. We work as much as possible with the spoon so as not to excessively heat the mixture.
Transfer to the worktop, adding the flour little by little until you get a compact dough which we will rest in the fridge for 30-40 minutes, wrapped in plastic wrap.
In the meantime, let's prepare the cream, the curd. In the saucepan we gather lemon juice, sugar, milk and starch. We dilute with the whisk so that there are no lumps before moving on the stove over medium heat.
Stir continuously until the mixture thickens, then turn off the heat and transfer to a small bowl, cover with plastic wrap so that the crust does not form on the surface and let it cool.
We resume the dough and roll it out to a thickness of about 4mm, cut our biscuits paying attention to form the pairs (one closed and one open). Arrange gradually on the pan lined with parchment paper.
We cook in a hot oven, static at 165-170 ° for 10 minutes, they do not have to color much otherwise they become too short and it is difficult to eat them together. Let it cool completely in the pan, they are very delicate. We mate and serve!
