In a bowl pour the rice flour, a pinch of salt and add a little water until the flour is compacted. Remember that rice flour has no gluten, so it will be difficult to be together.

Wrap in cling film and leave to rest in the fridge. In the meantime, prepare the filling.

Add the salmon, rocket and ricotta to a chopper. Blend until a homogeneous mixture is obtained. If you have some filling left over at the end of the preparation, you can use it for delicious bruschetta

Take the pasta from the fridge, sprinkle a wooden board with a little rice flour and with a rolling pin try to make the dough as thin as possible, without piercing it. It will not be easy because it will tend to fall apart.

With a pastry cutter, create discs (or flowers as in my case) and insert the filling in the center of half of them (not too much, otherwise if you cook the tortello it will tend to split). Close with another disc and with the prongs of a fork press the edges.

Prepare a sauce with a little fried onion, cherry tomatoes and olives. Add a little hot water and cook for about 10 minutes. Meanwhile, boil water to cook your tortelli.

When the water boils gently lay the tortelli (I recommend you already insert a colander in the pot, in order to lift the tortelli gently without going to look for them with the skimmer at the end of cooking, thus avoiding that they break) and cook 5/8 minutes.

Drain and lay them in the sauce, which you will cook over medium heat to dry the excess water. DO NOT MIX, the tortelli are very delicate and you would risk breaking them. Simply shake the pan so that it doesn't stick to the bottom and make it jump slightly.
