One of the risottos that I keep in mind in the days when the question that the brain drills on makes its way into the daily routine and troubles you with the typical and systematic question: what if you magnamo tonight ?! The radicchio with its bitter aspect brings the rice in a precise direction while the thymus gives it further character. I would say that this is a vegetarian dish with its dignity without being excessive on the palate.
