Melt the chocolate in a bain-marie. In the meantime beat the butter until soft, add the icing sugar, the yolks (one at a time) and the melted and cooled chocolate. Mix in the flour a little at a time with a spatula.

Beat the egg whites until stiff in another bowl with the sugar and mix in with the rest of the ingredients working from the bottom to the top without taking the air out of the eggs.

Pour the mix into a buttered and flour tin and cook at 180 degrees for around 40 minutes. The cake should remain moist inside.

Cut the cake into two slices. Spread one slice with the apricot jam. Place on top of the other slice and spread the rest of the jam on the outside of the cake allowing the gelatin to set.

For the icing: place the ingredients in a pan and cook for 5 minutes. Let cool. Cover the cake including the sides. Place in the fridge until the icing is well set.
