Dice the carrots
Cut radishes into wedges
Cut the courgettes into sticks
Grate the fresh ginger until obtaining the quantity of a generous spoon
Finally cut an apple (without peel and seeds) into small cubes, leaving 4 thin slices aside to decorate the dish
In a high pan, heat the organic corn oil. When it is hot, pour the carrots and the bay leaf. Sauté for 10 minutes over medium / low heat, stirring constantly (I like to use Chinese chopsticks!)
Add the radishes and sauté for another 5 minutes
Add the zucchini and apple, salt and mix well. Lower the flame and cover. Finish cooking, stirring occasionally, for about 20 minutes.
Serve by adding the apple slices and serve. It can turn into a single dish if served with whole red rice. Enjoy your meal!
