First of all we prepare the tofu: cut the sliced breadcrumbs, then strips and finally pieces to get small strips but if you prefer you can also comfortably make it to cubes.

Pour it into a non-stick frying pan with a spoonful of EVO oil, plenty of smoked sweet paprika (pimenton) and a pinch of salt. If you do not have it, you can use the smoked tofu directly.

Once ready and crunchy, take the tofu from the pan and place it in a bowl.

In the same frying pan now, sauté with the onion and then add the peas. I used (alas) the frozen ones, if you have the chance to use the fresh ones that are obviously much better.

Rinse with a drop of white wine (about 1 finger) and let go to moderate heat.

When they are almost ready, add the fresh tomato cut into strips, chopped parsley, a pinch of salt and a ground black pepper.

Go for a moment and finally add the cream of rice. If you prefer, you can also use the soy cream, less sweet but also less creamy.

When the ears are ready (I used fresh wholemeal ears), drain and pour in the frying pan with the dressing.

Add the previously prepared smoked tofu and mix well together by mixing all the ingredients together.
