Recipe made by Monia Amadori cook Cooking Passion cooking school. Plate rich in magnesium and antioxidants thanks to its excellent ingredients: Fiberpasta with raw cauliflower, almonds and a delicious pesto of parsley and white almonds.
Divide the cauliflower into cinnamon, remove the curls, and wash.
Heat the oil in a frying pan, pour 30gr of almonds into strips, put the cauliflower halves (cut into small pieces) and cook for a few minutes until the cutters are abstrustolite
Make a pesto by putting the parsley leaves in the blender's glass, a peeled garlic clove, the whole pecorino and almonds
Blend with olive oil until you have obtained a homogeneous mixture.
Cook the dough in salty boiling water, drain it to the tooth (keeping some cooking water) and bake it in the frying pan with cauliflower peaks.
Finish baking the dough. Add the parsley pesto to the last.
Mix and if needed to give creaminess add some of the cooking water you have kept aside and serve. Wanting to add a little chili in the pan.
