Here is one of my absolute favorite desserts: cheesecake! I tried to revisit this dessert so that it can be enjoyed not only as a dessert after a meal but also as a tasty breakfast every day, without feeling guilty!

First, let's take care of the base: mince the biscuits in the mixer until we have obtained a grainy mixture. Then, pour just enough water to have a moist but not too easy and easy to handle mixture.

At this point we place a pastry cutter on a saucer and level our biscuit base. Once done, put everything in the freezer for 30/60 min. In the meantime, we can take care of our second layer.

Now soak the gelatin in cold water for about 10 min. Meanwhile, pour our yogurt in a bowl together with lemon zest (or other spices to your liking, I also added cinnamon), mix and set aside.

At this point we heat a little water in a saucepan and go to melt our jelly. We incorporate everything with yogurt and then pour our cream over the layer of biscuits and leave it in the fridge overnight.

The following morning we just need to take our fit cheesecake out of the fridge and decorate it with what we prefer (e.g. fresh fruit, chocolate cream, jam). I decided to add some peanut butter, some coconut flakes and fresh fruit. And here it is served!
