Today I would like to share with you another recipe in the book Food for the heart. This is a solution as unusual as it is tasty: I'm talking about pizza with chickpea hummus, caramelized onion and cherry tomatoes chutney. From the first taste it will be possible to notice how the unexpected combination of the pizza with the chickpea hummus will be able to surprise you with a surprising and succulent taste.
PIZZA DOUGH: Melt the brewer's yeast in 50 ml of lukewarm water. Sift the flour in a bowl. Pour the yeast mixture into the center of the flour fountain. Add the ricotta, sugar, 3 tablespoons of oregano, 2 tablespoons of oil and salt.
Start to knead, pouring the remaining lukewarm water. Knead until a homogeneous mixture is obtained. Cover with a damp cloth and let rise for about an hour in a warm place.
TOMATO CHUTNEY: Cut the onion into thin slices. Cook the onion in a saucepan with 1-2 tablespoons of water, stirring occasionally, until it becomes lightly colored.
At this point add 3 finely chopped garlic cloves, whole tomatoes, 4-5 tablespoons of water, 100 g of apple vinegar, 1 tablespoon of honey, a pinch of allspice, cinnamon and black pepper. Cook for about 10-15 minutes over low heat.
CARAMELED ONIONS: Cut 2 julienne onions. Heat a pan. When it is hot enough, add the onions and 2-3 tablespoons of water. Cook over low heat, stirring occasionally, until they are well colored.
CECI HUMMUS: Put the previously drained and rinsed chickpeas into the mixer glass. Add 2-3 tablespoons of water, 1-2 tablespoons of lemon juice, 2 tablespoons of mustard and 2 cloves of garlic. Blend until obtaining a homogeneous and creamy consistency.
PIZZA: Oleate a rectangular pan (30x40 cm) on which you will roll out the dough. Leave it to rest for about 30 minutes. Bake the pizza in preheated oven at 210 degrees for about 15-20 minutes. Remove the pizza base and spread a layer of chickpea hummus.
Spread the caramelized onion.
Finally distribute the cherry tomatoes chutney. Decorate the pizza with some fresh basil leaves. Before serving, heat the pizza in a preheated oven at 180 degrees for about 2 minutes.
