Tropical Cookies are a real treat and like their name, they have a completely exotic taste. If like me you love pineapple and coconut I suggest you prepare them and once tasted you will not be able to resist their tropical appeal! I made these cookies using coconut butter, a fabulous ingredient, used a lot in South America, which thanks to its natural sweetness allows us to reduce the dose of sugar expected. The dough is based on rice flour, potato flour and coconut flour, so they are naturally gluten-free.
