Collect the nettles equipped with gloves, taking care to remove mainly the tender tops and leaves.

Wash nettles well. Blanch in plenty of water for two to three minutes, drain without squeezing.

Wash the potatoes with the peel and cook them under pressure or steam (so that they absorb little water).

In a large frying pan, brown the finely chopped garlic clove in extra-virgin olive oil, then add the cream of milk and cheese and saffron.

Season with salt and pepper. Cook for 5 minutes. When the water boils, throw your eyes, stirring gently.
